My Birthday Cupcakes

My birthday was last week.  I enjoy a special day for my birthday.  My husband usually leaves it up to me to plan and cook dinner.  I have learned, over the years, that means I will cook my birthday dinner too. 

Mr. Homegrown takes me out to dinner on my birthday, but for the family celebration where the little Beanes give me a card they made and sing happy birthday, it is just dinner as usual around here.  So, this year, I remembered that and decided to make myself a special dinner and dessert for myself.  It was yummy.

I was feeling the years creep up on my with this birthday.  I don't feel old but I am old enough to say that I have had some of the same friends for 30 years.  I had sort of gotten okay with saying that about friends.  I mean, when you grow up in and continue to live in the same town, chances are you will have some of the same peeps as you did in kindergarten.  Last weekend the years really hit me when we were on vacation in the mountains.  We were waiting to in line to go in Linville Caverns.  I was telling String Beane and Butter Beane about the last time I was at Linville Caverns.  I was around 8 or  years old.  My mom and dad took my brother and I to the caverns and I remember it as a really fun trip.  As I was telling my boys about it, I realized that it had been 30 years since that first trip.  Thirty!  That just sounds like longer ago than I should know about.

To make myself feel young again, I made a cupcake that I found online.  It was a throw back to peanuts in Coke!  I used to eat/drink peanuts in Coke while riding to the beach in the summer.  No matter how long ago that was, I feel like a little girl when I think of peanuts in Coke. 

Here is the recipe that I found.  I modified it to make it safe for my String Beane.  It was super yummy.  The frosting is the key!  It was my favorite homemade frosting ever!


Cupcakes
1 cup Coca-Cola
1/2 cup unsweetened cocoa powder
4 Tablespoons unsalted butter (I used Fleishmann's unsalted margarine, milk free)
1/2 cup plus 2 Tablespoons granulated sugar
1/4 cup brown sugar
1 cup all purpose flour
1/2 teaspoon plus 1/8 teaspoon baking soda
1/2 teaspoon salt
1 egg

Directions
Preheat oven to 350 degrees.  Line a cupcake pan with paper liners and give a quick spray of cooking spray. 

In a small sauce pan, heat the coca- cola, cocoa powder, and margarine until margarine is melted.  Whisk in the sugars until dissolved.  Revome from heat and let it cool.

In a large bowl, whisk the flour, baking soda and salt together.  In a small bowl, whisk  the egg until just beaten.  Stir the egg into the cooled cocoa mixture.  Add the cocoa mixture to the flour mixture.  Stir until combined. 

Use a 1/4 cup measuring cup to pour the mixture into the cupcake liners.  Bake for 25 minutes or until the cake springs back when touched in the middle. 

Salted Peanut Butter Frosting
4 cups of Powdered Sugar
1 cup unsalted butter, softened (I used Fleishmann's unsalted margarine, milk free)
1 cup creamy peanut butter
1/4 teaspoon salt
3-4 Tablespoons heavy cream (I used vanilla Almond milk)
Ground salted peanuts, for garnish

In the bowl of a stand mixer fitted with a whisk attachment, combine powdered sugar, butter, peanut butter and salt.  Mix on low speed until just combined, then switch to high speed.

Add heavy cream one tablespoon and beat until mixture is lightened and smooth.  Transfer to a piping bag or zip-top bag with the corner snipped.  Pipe onto cooled cupcakes.
Garnish with ground peanuts.



These cupcakes were as good as they look in the picture.  They made me happy on my birthday!  That is what a good cupcake should do.

Peanut Butter Chocolate Chip Bread



I have been on a peanut butter and chocolate kick lately.  I can't help it.  It is the greatest combo of flavors ever.  It is a fact.

My String Beane outgrew his peanut allergy late last year.  We have treaded slowly, but surely into the peanut world.  I think I am finally at peace with him eating peanuts and peanut butter.  Maybe that is why I have been adding peanut butter to everything lately.

I saw this recipe on Pinterest and knew that I could switch it up a bit to accommodate us. 

I just changed some of the ingredients to make this milk free for us.  It was a delicious bread that everyone ate.  We ate it for breakfast and snacks.  It did not last long!  I have to say that it was especially yummy with a cup of coffee after the little Beanes had gone to bed.

Here you go:

Ingredients
6 TBSP unsalted butter, at room temperature (We use Fleishmann's unsalted- it is milk free)
1/3 cup peanut butter
1 cup granulated sugar
½ tsp. vanilla extract
2 eggs
3 medium, ripe bannans
2 cups all-purpose flour
½ tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 cup semi sweet chocolate chips. (We use Gharidelli semi sweet - no milk)

Preheat the oven to 325 degrees. 
Sift all of the dry ingredients together in a bowl and set a side.

Cream the butter, peanut butter and sugar on medium high for 3 minutes until light and fluffy. 
Add eggs, one at the time, beating after each addition.  Add vanilla and beat an additional 30 seconds.
Add bannanas and mix until incorporated.

With the mixer on low speed add the dry ingredients and mix until everything is just incorporated. Don’t over mix. Remove from mixer and fold in chocolate chips with a spatula. This will also help the rest of the ingredients mix in.

Spray a loaf pan with cooking spray.  Pour batter into loaf pan.  Bake for one hour and 15 minutes.  Check with a cake tester to make sure it is done.  Cool in the pan for 10 minutes and then turn out on to a cooling rack to cool completely.

Eat up!

Peanut Butter Cup Brownie Bites



I am almost certain that ,thanks to Pinterest, I can pull off almost anything on a moments notice.

Or at least I think I can.  On that note, the biggest problem that I see with Pinterest, is that so many people are on it.  I mean when you think you are all creative and make something to go to a party, people will say 'oh, I saw that on Pinterest'.  Sort of takes a little something away. 

Anyway, we were invited to a pool party last night.  Whenever we are invited anywhere, the biggest dilemma I have is making sure there will be food that will be safe for String Beane's allergies.  I had the dinner part all planned out, but dessert had escaped my attentions.  Enter Pinterest.

I saw this post by Cookies and Cups and thought it would be easily adapted for milk allergies.  I pinned it. So, about 2 hours before the party started, I started working on a dessert to take. 

I made these cute little Peanut Butter Cup Brownie Bites.  They were GOOD!.  They were simple and they were fast.  And, I made them without milk!

Ingredients
One box of Duncan Hines Chewy Fudge brownie mix and ingredients called for on the box. (This is milk free)
1/2 cup butter, room temp (1 stick) (I used Fleishmann's unsalted margarine - milk free)
1 cup creamy peanut butter
6 cups sifted powdered sugar
1/4 cup milk (you can add more if your prefer a creamier frosting) (I used Almond milk)

Optional Garnish of chopped peanuts and chocolate syrup.

Directions
Start by preheating the oven to 350 degrees.
Mix up your brownie mix according to package directions.
Line a mini muffin pan with pretty cupcake liners and give it a spray with cooking spray.
I used a cookie scoop to fill the cupcake liners about 2/3 full.
Bake for 12 minutes.  I wanted these to be a little gooey, so do not over cook.
Allow to cool for about 10 minutes and then move them to a cooling rack and let completely cool.

While the brownies are cooling, make your frosting.
Dump the margarine, peanut butter, powdered sugar and almond milk in a bowl and beat with a mixer until smooth and fluffy.  Add more milk if you needed to make the frosting the consistency that you like. 

When the brownies are cool, pipe some frosting on the top of each one and look at your pretty work.

Garnish with some chopped peanuts and a drizzle of Hershey's Syrup.   If you have any leftovers, store them in the fridge. 

Take one more look at them.



They are so good.  Make yourself some.

Peanut Butter Chocolate Chip Bars!


Many of you have read about String Beane's allergies.  He was diagnosed with food allergies when he was just under 1 year old.  Peanut was one of his allergies.  We have avoided peanuts for the last 5 years.  That is how long it has been since I have bought or eaten peanut butter in my house!  5 Y.E.A.R.S.!

String Beane turned 6 years old on December 4th and on December 5th he went for a food challenge for peanuts.  He passed!  He is no longer allergic to peanuts. 

I have spent several days now searching for recipes that uses peanut butter.  The first recipe that caught my eye was this one for peanut butter chocolate chip bars.  They just look long over due for me.

I had to make a few adjustments to the original recipe to make them milk/dairy free.  Here is the recipe.

Ingredients
6 Tbls Flieshman's unsalted margarine
1/2 cup peanut butter
1 cup sugar
1/4 cup light brown sugar, packed
2 eggs
1 teaspoon vanilla
1 cup flour
1/4 teaspoon salt
1 teaspoon baking powder
1 cup chocolate chips (Ghirardelli semi sweet chips)

Directions
Preheat oven to 350. Lightly grease an 8 x 8" pan

Whisk together the flour, salt and baking powder. Set aside.

Cream the butter and peanut butter together until smooth. Beat in the sugars until combined.

Add the eggs, one at a time, scraping down the bowl after each addition. Stir in the vanilla.

Stir in the flour mixture. Add the chocolate chips, stirring until combined.

Spread the batter into the prepared pan and bake for 30-32 minutes.  Cool completely before cutting.

They were ooey, gooey and so good!  I had forgotten how good peanut butter treats could be.  If you can eat peanut butter, and I hope that you can, make you up some of these wonderful treats.  You will not be sorry.

The Beanes are officially nuts!  String Beane passed his in office food challenge for peanuts last week!  Woo to the Hoo!

I have not been this excited about food since he got the go ahead to eat shrimp.  After his allergy appointment, we went to Target and I bought every peanut/nut item I could find that did not contain milk/dairy. 

We have added alot of new snacks! 

I have had the most fun looking on Pinterest for some new recipes that contain peanuts or peanut butter.  My Friday Favorites this week are all recipes that have peanut butter in them!
