Campfire Chicken and Rice

I have never been a "camper".  I have always loved the idea of camping, but have never really done it.  I get so excited about the thought of going camping but then the realization about the bathroom situation occurs to me. 

I am meant for more luxury than the woods.  I just was not made to rough it.  I like having electricity and plumbing.  So no real camping for me.

The camping food is appealing.  I love S'Mores and cooking hot dogs on a stick.  Mr. Homegrown does too.  We are kindred spirits.  He built a fire pit in our back yard several months ago.  The little Beanes and I have had a great time eating hot dogs and S'Mores outside.

For Christmas, Mr. Homegrown wanted a Dutch Oven so he could expand our outside dinning menu.  He got one and tonight was our his first try at dutch oven cooking.  It went well.  It was yummy.  We all liked it.  Mr. Homegrown is proud of Himself.  And it is not a hard recipe to make.  You can also cook it in the oven inside your home if you want to.

 There are hot coals under the dutch oven and more hot coals on top of the dutch oven.

 An hour and 15 minutes later, he is going to remove the lid to check the progress.


What do you know?  It worked!  We had delicious Chicken and Rice for dinner.  And you can too!

Ingredients
1 whole fryer chicken
1 cup rice, uncooked
1 can of cream of chicken soup (I used a homemade concoction that has no milk in it)
1 can water
1 can of chicken broth
1 teaspoon of salt
1/2 teaspoon of pepper
1 packet of Knorr Vegetable Soup Mix

Directions
Spray the dutch oven with cooking spray.  Put on cup of rice in the bottom of the dutch oven.  Wash the chicken and cut it into parts.  Put the chicken pieces on top of the rice.  Sprinkle with the Vegetable Soup Mix, salt, and pepper.  Mix the cream of chicken soup, chicken broth and one can of water together and then pour over the chicken.  Put the lid on.  Place the dutch oven on top of some hot coals.  Place some hot coals on the top of the dutch oven.  Cook for 1 hour and 15 minutes. 

Alternately, cook in a covered casserole dish in the oven at 350 degrees for 1 hour and 15 minutes. 

This was a fun family fun day/night.  I still think that the best part of camping is the food.

  6. Looks very tasty and also healthy - I am going to try this indoors as I have no real outside space! I do have a cute little courtyard but I can't see me cooking out there somehow!

  10. Looks delicious! My toddler son has a severe milk allergy as well. What is your recipe for your homemade cream of chicken soup? That recipe would save my life?

    1. I make chicken and dumplings using Bisquick and soy milk (or whatever milk I am using, almond mostly now). The thick broth that is left over after we have eaten all of the dumplings is what I use for Cream of Whatever soup. I freeze it in ziplock bags and when a recipe calls for a can of cream of something, I use one baggie of dumpling broth. Works like a charm!

    3. Sure. It is not a 'recipe' exactly. I buy a whole fryer chicken. Wash it and put it in a large pot of water. The water should cover the chicken. Put in a stalk of celery and a carrot or two and an onion cut in half. Sprinkle with salt and pepper and bring to a boil. Reduce heat and cook for about an hour, or until done. Remove chicken and vegetables from the broth. Throw away the veggies and pull the meat off the chicken and set aside. On the side of the box of Bisquick, there is a recipe for Dumplings. I normally triple the recipe from the box. I use whatever milk is safe for my family. Mostly now I am using Almond milk. Follow the directions on the Bisquick box. Roll out the dough on a floured surface. I normally roll it out into a large rectangle. It is probably at least 15 x 9 inches. Use a pizza cutter to cute into strips.
      Boil the broth. When it is a rolling boil, drop the dumplings in quickly, one at the time. Give a gentle stir and reduce the heat a little. Cook for around 20 minutes. Give a gentle stir every once and again. When you think they are done, pull one out and sample. If it still tastes doughy, cook a little longer. Play around with salt and pepper until you get it the way you like it.

      Sorry this is not a real recipe. Sometimes it takes a few attempts at dumplings to get the hang of it. Either way, the thick broth that will be left over is great for 'cream of whatever' in other recipes. Hope this helps.

    4. Sorry, I forgot to say that when you think the dumplings are done, stir in the chicken.

      Don't be surprised if you have to add salt and pepper a few times until you get it where you like it.
