Menu Plan Monday December 31

This is the week that we ring in a new year! I always feel super organized and ramped up to start a new exercise plan and diet.  My house is super clean and running on a schedule....for about a week.  Then I slowly get back into my typical groove. 

I think that this year my resolutions will be a little less optimistic than in years past.  No point setting my self up for failure!  I am certainly not going to make any resolutions about not eating certain foods.  That is a sure fire way to gorge on whatever I am trying to cut out.

Friday Favorites

Happy Weekend Peeps!

We have become a bunch of lazy slobs around here.  The littles are sleeping until 8:00, playing games in their PJ's until lunch and then, maybe, getting dressed.  It has been so much fun!  I dread the lunch box packing, homework, waking up early school rut that will begin again soon enough.

Anyway, they have been playing so nicely, I have had some extra time on Pinterest.  Here are my top 5 favorites for this week.

S'Mores Casserole    1/2c. mini choc chips  marshmallows  graham crackers  1 1/4 stick butter  chocolate cake mix  5 oz box chocolate Jello(Cook)  1c. milk  Preheat oven 350. spray 13x9 baking dish. Mix Jello& ONE c. milk,& pour into dish. Half graham crackers, & place on top of Jello mix side by side close. Layer with chocolate chips.Pour cake mix on top. Drop butter by tablespoon onto the cakemix. Bake 25 mins. Top with rows of marshmallows, bake 10mins & enjoy!!

Friday Favorites

Welcome home Friday!

This is our first full day of Christmas vacation.  String Beane got out of school at noon yesterday.  Everyone was up and at 'em at 6:30 this morning!  Typical. 

All the little Beanes are so excited about Christmas.  Butter Beane and String Beane keep asking how many more days and Jelly Beane goes around the house looking for our Elf.  I am getting excited too!  I think this will be the year that Christmas morning will be so fun.

Good Morning!  It is beginning to feel a lot like Christmas around here.  The little Beanes are counting the days and finding the elf.  Jelly Beane is opening presents and I am rewrapping presents and saying "no, no". 

It is so much fun with all the excitement.  I am getting more excited by the day myself.

Menu Plan Monday December 10

Happy Monday everyone!  I hope you are off to a great start.  We are getting more and more excited about Christmas here.  Butter Beane keeps asking if it is Christmas today!  I love the excitement.  I can't wait until Christmas morning to watch them. 

I am trying two new recipes this week.  Monday and Tuesday are the guinea pigs.  The rest of the week are tried and true favorites!

Hello Fridizzle!  I am so glad to see you! 

We are in full swing Christmas mode here at the Beane house.  Our Elf on the shelf showed up this morning.  All 3 little Beanes were up at 6:15 trying to find her.  Note to self:  Next year do not tell them that the elf will be somewhere in the house when they wake up.  Lesson learned.

Happy Friday!  I am so excited about this weekend.  Some family is coming to start off the Christmas celebrations.  My little Beanes will get their picture made with Santa tomorrow morning.  Our tree is up and our house is looking more and more like Christmas.

Menu Plan Monday November 26

I am back!  My old laptop died a few weeks ago.  There was no hope in fixing it.  It was too old to put much repair money into it. 

Thanks to Black Friday, I got a new one!  I am so happy to be able to post again. 

I hope everyone had a wonderful Thanksgiving and is now happily remixing the leftovers into something new.  We are!

Menu Plan Monday November 5

Happy Monday to everyone.  I am kind of excited about this week.

We have no school or preschool Tuesday.  Yea!  My String Beane will be going to his first lock in Friday night.  I can't wait to hear how much fun he had and what he did all night with his cub scout friends.

With Thanksgiving looming over my head and a few family get togethers and a birthday party in the next few weeks, I am planning some easy and cheap menus for this month.

Cinnamon Muffins ~ milk free


I think that I have mentioned here before that I hate to cook breakfast.  H.A.T.E.  I love breakfast food and my family loves to eat breakfast for supper every now and again.  I just hate to mess up the kitchen so early in the day. 

So I am always trying to figure out what to feed my people before school that I don't really have to cook that morning.  Enter muffins!  You can whip them up any ole time of day and they will be right there waiting for you in the morning. 

I saw this recipe for cinnamon muffins at Cookies and Cups.  (I love all of Shelly's recipes and her stories are so funny!)  I tweaked it up to take out all of the milk and got these yummy muffins.

Here is the recipe for you.

Ingredients
    Topping:
  • 1/2 cup brown sugar, packed
  • 1/3 cup old fashioned oats
  • 1/2 cup all purpose flour
  • 3 Tbsp softened Flieshmann's unsalted margarine - milk free
  • 1/4 tsp cinnamon
    Filling:
  • 3 Tbsp softened Flieshmann's unsalted margarine - milk free
  • 1/2 cup light brown sugar
  • 3 tsp cinnamon
  • 5 tsp water
    Muffin:
  • 1/2 cup Flieshmann's unsalted margarine, melted - milk free
  • 3/4 cup soy milk
  • 2 large eggs
  • 1 3/4 cups all purpose flour
  • 1/2 cup old fashioned oats
  • 2 Tbsp cornstarch
  • 3/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1/4 tsp ground nutmeg 
    Glaze *optional
  • 1 cup powdered sugar
  • 2 Tbsp soy milk
Directions
  1. Preheat oven to 400°
  2. Line muffin tin with cupcake liners, or spray with cooking spray.
  3. Topping:
  4. Mix all ingredients together with a fork until crumbly. Set aside.
  5. Filling:
  6. Mix all ingredients together until consistency is similar to a loose frosting or pudding. Set aside.
  7. Muffins:
  8. In a large bowl whisk together margarine, soy milk and eggs. In another bowl combine flour, oats, cornstarch, sugar, baking powder, salt, and nutmeg.
  9. Pour the dry ingredients into the wet and stir until just combined.
  10. Using half the batter, fill each muffin tin with 2 Tbsp batter. Then drop 2 tsp of filling into each tin. Finish, by dropping another 2 Tbsp of batter on top. Depending on the size of the muffin tin, you may get more than 12 muffins.
  11. Now sprinkle your topping evenly on the muffins (about 1 tbsp on each).
  12. Bake 20-25 minutes until centers are set.
  13. Cool on wire rack.
  14. Glaze:
  15. Combine butter, sugar and milk, stirring until there are no lumps, adding more powdered sugar or milk until desired consistency is reached. Drizzle on muffins when ready to serve.
  16. Drizzle with glaze when ready to serve.
I hope you enjoy these as much as we did.  They were awfully good and tasted so much like coffee cake.  It made it  very nice to wake up this morning with these muffins waiting on me.  No mess in the kitchen!

Friday Favorites

Who is glad that Halloween is over?  Me! 

All the excitement that leads up to actually going trick-or-treating and then the sugar high that seems to last for 36 hours straight is enough to kill me. 

We started a new tradition in our house this year for Halloween.  The "Switch Witch" visited us this year.  My oldest son is allergic to milk so about half the candy we get trick-or-treating contains milk.  So every year after we get all the candy, we sort it out into what is safe for him and what has milk in it.  So basically, all the candy bars go in to my pile.  This year we took all the candy that contained milk and left it out for the "Switch Witch".  While we were sleeping she took all the milk candy and switched it for some toys for the little Beanes.  It was a huge hit!  They all loved it.  The "Switch Witch" is a great idea for your food allergic children.

Menu Plan Monday October 29

Welcome home Monday!  Whatever.

I was hoping that this would be an easy week since I was noticing that several of our weekly activities are cancelled for this week.  Then it occurred to me that it was Halloween week.  Yikes!

I do get sort of excited about Halloween.  My boys are dressing up as Vampires and my daughter will be the cutest ghost ever.  I can't wait to see them all dressed up.

So anyway, here is my plan for this week...what there is of it.
