Pig on a Stick with Sweet and Spicy Dipping Sauce


Pork.  It's the other white meat. 

We like pig around here.  I was able to snag a few pork roasts when they went on sale and popped them in the freezer.

When I saw this recipe I knew we would love it.  We did. 

The little Beane's thought calling it 'Pig on a stick' was funny.  

The dipping sauce was so good.  You should go make this for dinner.

I adapted this recipe to what I had on hand.

Ingredients
2 ponds of pork roast cut into 4 inch long strips
1/2 cup soy sauce
1/4 cup olive oil
1-2 teaspoon minced garlic
1 Tablespoon jerk seasoning - recipe follows
Dipping Sauce - recipe follows

Directions
Soak 24 wooden skewers in water for at least 20 minutes to prevent burning.
Place pork in a zip lock bag.

In a bowl, combine the soy sauce, olive oil, garlic, and jerk seasoning.  Pour over pork.  Let marinate in the refrigerator for 1 hour.

After one hour, thread the pork strips on the skewers in an "s" shape.  Discard the marinade. 
Lightly spray a broiler pan with cooking spray.  Place pork skewers on the broiler pan.  Broil 5 inches from heat for 8 minutes, turning once.

Serve warm with the dipping sauce.  Yum.

Jerk Seasoning
1T salt
1 t allspice
1 t brown sugar
1 t garlic powder
1 t onion powder
1/2 t paprika
1/2 nutmeg
1/2 t black pepper
1/2 t ginger
1/4 t cinnamon
1/4 t ground cloves
Combine all ingredients in a bowl until well mixed.  Store in an air tight container.

Dipping Sauce
1 Tablespoon butter (I used Flieshmann's unsalted margarine - milk free)
1 jalapeno pepper, seeded and minced
1 teaspoon fresh ginger
1 (18 ounce) jar orange marmalade
2 Tablespoons fresh lime juice
1/4 teaspoon salt

In a medium pan,  melt butter over medium-high heat. Add pepper and ginger, and cook 2 minutes, stirring frequently. Reduce heat to medium-low, and stir in marmalade, lime juice, and salt. Simmer 5 minutes, stirring frequently.



This was really so good.  The dipping sauce is unbelievable. 

We served this as an appetizer the night I made it.  I served up the left overs with steamed rice and broccoli.

It was good both ways.
